In the ps1 era no one was really official right. A lot say Crash, but did Sony ever ACKNOWLEDGE him? Feels like they never had one. In the PS1 era Crash was the headliner with backup in Spyro and mayyyybe Sweet Tooth. If you really stretch it you can argue "final fantasy character" as a stand in. Still it never felt legit like it was with Sonic and Mario for our boy Crash. Wouldn't be long as Naughty Dog started sniffing their own farts and didn't wanna play with him no mo. PS2 it's hard to say, Ratchet was running the place but it feels like again more ensemble with the likes of Kratos, Kingdom Hearts, Tekken, Jak, Dante... hard to say as the box art usually reflected them all as a stable. There was no mega star.

3 they looked to Sackboy as their guy. He wasn't really over though, so it was sort of a Michelin Man situation. Sure he's our logo, by default. He's remained their safe, but harmless bannerman ever since.

Why do you think they never went with Crash proper?

Nathan Drake was the PS3 Mascot TBH. 3 big games for the system, Sackboy probably close 2nd though.

I would say Kratos & Ratchet/Clank for PS2. PS1 is tricky as you said, some herald Lara Croft as the mascot of the System or Crash Bandicoot or Spyro the Dragon.

For original IP, either Aloy or Ellie would probably be the PS4 rep although Ellie began in PS3 albeit late in it's cycle. My girl Kat from Gravity Rush was the Vita mascot which is an insult or blessing pending on how you look at it. 

I think them losing Crash Bandicoot to Activision ended up sealing the deal for PS2 onward but they had commercials with Crash Bandicoot as the mascot of PS1.

For PS2, you could put Jak and Daxter into the mascot campaign.

As for the overall mascot for PlayStation, I'd go with Astro the Robot.  Astro's had games dating back to the original PlayStation, and Astro's Playroom came built in with the PS5.

The Playstation does not need the limitations of one mascot. The Playstation is too strong for one character.

Lara Croft, Crash Bandicoot, Spyro The Dragon, Cloud Strife, Jak and Daxter. The list goes on.

People knock Knack 1 and it's a whatever game but Knack 2 is actually pretty good, would be down for Knack 3 if Cerny ever does it.
